Gova Laddu(Wheat Laddu)

This is an instant sweet made from whole wheat. Small children like them very much. Preparation is very easy.

Ingredients:

Whole wheat-1 cup,

jagerry-1 cup,(powdered)

coconut scrapings-1/2 cup,

cashewnuts-a few,(chopped)

kismis-2 tsps,

ghee-2 tsps,

cardamom powder-1 tsp.

Method:

In a dry pan, roast the wheat till it flutters.

Powder it to a coarse texture, using a mixer.

Fry cashewnuts and kismis in ghee.

Fry the coconut scrapings in a little ghee for a minute or two.

Mix all the items thoroughly including the jagerry and cardamom powder.

Take small portions of the mix and form laddus with the help of both the palms.

This sweet does not have a shelf life, can be kept for a couple of days.

KELYA  LADDU(BANANA  LADDU)

This laddu is made as neivedhyam in Konkani temples in the month of Karthik.

The preparatoin is very easy.

Ingredients:

raw kerala banana(nenthrakkai)-2 nos,

jagerry-250 gms,

cardamom powder-1 tsp and

oil for frying.

Method:

Remove the outer skin of the banana completely.

Cut the banana into very small pieces.

Deep fry in oil.

Using a cup of water, make syrup from jagerry to 2 thread consistency.

Remove from the flame, add the fried banana pieces and cardamom powder and mix well.

Make laddus, applying a little ghee on palms, when the mixture is still reasonably hot.

When they get cooled, tranfer them to an airtight container.

CHARMURYA UNDO(PUFFED  RICE LADDU)

This type of laddus are common in many states of India.The excellence comes forth only if the right variety/quality of jagerry is used and also in the preparation of the jagerry syrup to the exact consistency/quality. Children relish this item very much.

Ingredients:

puffed rice-3oogms,

panka god(chikki gud)-200gms,

Note: Chikki gud is a special variety of gud specifically used for making laddus/chikkis.

Method:

Make jagerry syrup, using 1 cup of water,  to 2 thread consistency.

Add the puffed rice and mix well.

Switch off the flame.

When it comes to a reasonably hot condition, start making laddus, applying a little ghee on the palms.

Once it gets cooled, store it in an airtight container.

BHIMUKA UNDO(GROUNDNUT LADDU)

This laddu is a delicacy for all age groups.For this preparation, proper quality of jagerry is a must, besides the requirement of the expertise for making the jagerry syrup to its right consistency..

Ingredients:

groundnuts-300gms,

panka god(chikki gud)-200gms.

Roast the groundnuts in a dry pan to a light brown crispy texture.

Remove the skin by smashing the nuts with hands and then fanning it.

Grind the nuts very light to make small granules.

Make syrup with jagerry using 1 cup of water, to 2 thread consistancy.

Add the groundnut granules to the syrup and mix well.

Remove from the flame and when it comes down to a reasonably hot condition, start making laddus, applying a little ghee on the palms.

When the laddus gets cooled, store them in an airtight container.

MATHHI UNDO(BOONDI LADDU)
 A very common sweet prepared in almost all parts of India. It is relished by all young and old ones. This is one of the must sweets prepared during marriages and similar other occasions, especially in southren parts of India.
Ingredients:
Besan-1/4kg,
sugar-1/2kg,
oil for frying.
cashewnuts-15,
raisins-1tbsp
salt a pinch,
yellow colour(optional) -a pinch and
cardamom powder-1tsp.

MATHHI UNDO(BOONDI LADDU)

Method:
 Mix  besan  and  salt  and add sufficient water to  make a batter of  pouring consistency(but, should not be watery).
Fry boondis from the batter, with the help of a boondi laddle(boondis should not be too crispy) and keep aside.
Fry cashewnuts(make pieces) and raisins in little ghee to a golden brown shade.
Add 1/2 cup of  water to the sugar along with the colour and make syrup to a one thread consistency.
Add boondis, cashewnuts, raisins and cardamom powder to the syrup and thoroughly mix them.
Allow the mix to cool down a bit and form laddus with the help of the hands. Apply a little ghee on the palms for forming the laddus.

NANCHANYA  UNDO(NACHNI LADDU)
 
Ingredients:
nachni-2cups,
sugar-1 1/2cups,
cashew nuts- 10nos,
raisins- a few,
ghee-1/2 cup and
cardamom-1tsp.
 
Method:
Clean the nachni and roast it in a pan  for 5 mts. Grind it in a mixie.
Powder the sugar.
Fry cashew nuts(made into pieces) and raisins in a little ghee.
Heat ghee in a pan,remove from flame  and add all the items to it and mix thoroughly.
Allow the mix to cool down a bit and then form laddus with the help of hands. 
NOTE: In place of sugar,  jaggery can also be used.  Powder the jaggery  and add it to the ghee along  with the other items to form laddus.

TILA UNDO(TIL LADDU)
Ingredients: 
til-2cups,
jaggery(chikki/sticky/panka variety)-1 cup.

TILA OONDO(TIL LADDU)

Method:
Roast til in a  pan  for a few minutes just to remove its raw texture.
In a pan make jaggery syrup in three string consistency, using 1/2 cup water.
Switch off the flame, add the til to the syrup and mix well.
Form laddus  when the stuff is reasonably hot with the help of hands applying little ghee on palms.

DHAANYA   UNDO(MIXED  GRAIN LADDU)

 
This sweet contains cereals which are rich in protiens. This is a sweet relished by each and everyone in the house.
 
Ingredients:
 
boiled rice-1cup,
nanchono(nachni)-1cup ,
chana dal-1cup,
moong dal-1cup,
wheat flour-1cup,
jaggery-1/2kg,
cashewnuts-10,
raisins-1tbsp,
cardamom powder-1tsp and
ghee-1 1/2cups
 

DHANYA UNDO

 
Method:
Roast all the items separately in a pan, except rice, on a low fire for 5mts each. Roast flour seperately.
Wash the rice and strain water. Roast it in a pan for 5 mts. Grind all items together and make powder. 
Chop and fry cashewnuts along with the raisins in  a little ghee to a light brown shade.  
Powder the  jaggery and add ghee to it and thoroughly mix.
Add the above powders, fried cashewnuts, raisins and cardamom powder to the jaggery-ghee mix and mix again thoroughly well.
Make Undos(laddus) with the help of hands.
Optional:
Soyabean powder can also be added . Fry the soyabean first and powder it along with the other grains and rice and follow the subsequent procedure for making laddus.

 Lallanva Oondo(Rawa Laddu)
 
A delicious sweet which can be savoured any time of the day. It is easy to prepare. Children love it because of its texture and sweetness.
 
LALLANVA OONDO- Type 1
 
Ingredients: 
fine white rawa-1/4kg,
sugar( powdered)-1/4 kg,
cashewnuts and kismis(raisins)- 1/2cup  together,
ghee-1 cup and
cardamom powder-1tsp.
Method: 
 
Roast fresh rawa till golden brown.
Roast cashewnuts(cut into small pieces) and kismis in a little bit of ghee.
Heat the rest of the ghee in a pan and add all the ingredients into it and mix thoroughly well.
Make oondos(laddus) by softly pressing and forming with both the palms. Smear a bit of ghee on both the palms for easy pressing and forming.
 
 
  
  
  
    
LALLANVA  OONDO-Type-2.
 
Ingredients:
 
fine rawa-1cup,
sugar(powdered)-1cup,
coconut scrapings -2tbsp,
cashewnuts  and kismis(raisins)- !/2 cup and
cardamom powder-1tsp.
 
Method:
 
Roast rawa till light brown.
Roast cashewnuts(cut into small pieces),coconut scrapings  and kismis in a little ghee.
Make sugar syrup in a pan using little water, to one thread consistancy.
Add all the ingredients to the sugar syrup and  mix throughly well.
Make laddus as explained in Type-1.
Apply little ghee on hands before forming the oondos(laddus).

Bassan Oondo(Besan Laddu)
Bassan oondo is one of the sweet items prepared during  festivals like Diwali ,Samsarpadavo(New year) ,any important function in the house when a feast is hosted.
It is a children’s favourite because of its texture and taste.It makes an effortless eating. You keep a small piece of oondo on your tongue and it simply melts down your gullet as smoothly as an icecream . Its taste and flavour is so inviting that you go on gulping piece by piece of this oondo without a count on how much you have eaten.

BASSAN UNDO(BESAN LADDU)

Ingredients:
Besan-1/4kg,
sugar( powdered)-1/4kg,
ghee-1/4kg,
Cashewnuts -10,(cut into small pieces), kismis- as required and
cardamom powder-1/2tsp.
Sugar powder can be made by grinding the sugar in a mixie/blender
Method:
Normal procedure: In a kadai fry besan and ghee together till golden brown. Remove from fire and add sugar powder. Fry cashewnuts and kismis in ghee. Add these along with cardamom powder to the besan mixture and mix well.   When warm, make oondos, pressing lightly  with both the hands.If necessary, a bit more ghee can be added to have a  consistency for forming the oondo.
Easy Method:
Fry the besan dry in a kadai till nearly golden brown. Add ghee and fry for another few  mts . Add sugar,fried cashewnuts,kismis and cardamom powder and mix well.When warm, make oondos pressing lightly with both hands.
