BHAJJA PITTO(MASALA CURRY POWDER)

Ingredients
corriander  seeds-2tbsp,
urad dal-2tbsp,
chana dal-1tbsp,
red chillies-6,
jeera-2tsps,
solid hing- a small  piece,
methi seeds(fenugreek)-1/4tsp and
pepper-1/4tsp.
 
Method:
Roast dry all the items in a pan to a light brown shade.
When cooled, grind in a mixer to a very fine powder.
 Keep in airtight bottle.
 
You can use this powder for preparing 3 to 4 different dry curries.
 
A tablespoon of dry coconut and one spoon of til can also be added to the above items  as an option to have a different taste.

SAMBARA  PITTO(SAMBAR POWDER)

Home-made sambar powder has a longer shelf-life when properly stored in an an airtight container.

Ingredients
Coriander seeds-1 cup
chana dal-3/4 cup
tur dal- 3/4 cup
red chillies-8
turmeric   powder-1tsp
hing-1/2tsp
fenugreek(methi) seeds-2tsps,
pepper and cumminseed(jeera )combined-1/2 tsp

Method
Fry  all the items, except hing and turmeric powder,  in a kadai  without oil  to light brown colour. When fried items come to the normal temperature,, mix hing and haldi and grind well . Store in an  airtight bottle.

RASAMA PITTO(RASAM  POWDER)

Ingredients:

Corriander seeds-1 cup,

chana dal-3/4 cup,

tur dal-1/2cup,

red chillies-8,

jeera(cummin seed)-2tbsps,

pepper-2tsps,

methi seeds(fenugreek)-1/2tsp,

solid hing-a small piece and

 turmeric powder-1tsp.

Method:

Roast all the items, except the turmeric powder, in a dry pan , without oil, till the mix takes a light brown colour and gives out a roasted fragrance of the condiments.

When it gets cooled ,grind it in a mixer to a very smooth powder.

Add turmeric powder,mix well and store in airtight bottle.

This is an extremely useful ready-to-use curry powder which comes handy when someone is in a hurry and wants to prepare a simple and quick side dish for the steamed rice.
