VAISAMBALA  SUKKEIN(BEANS CURRY WITH GRAVY)

Vaisambal is a type of green bean grown locally. It is similar to french beans, but with flat shape. The preparation using this goes as a side dish with meals.This type of preparation can be prepared with other vegetables too, like snake gourd, drumstick, banana flower, banana stem, cluster beans etc.

Ingredients:

vaisambal-200 gms,

coconut scrapings-1 cup,

red chillies-3,

turmeric powder-1/4 tsp,

sol-1 piece,

urid dal-1 tsp,

mustard seeds-1 tsp,

oil-2tsps,

salt to taste and

curry leaves.

Method:

Clean and cut the beans into small pieces.

Cook the beans in a pan adding 2 cups of water.

Grind masala with coconut scrapings, chillies and turmeric powder to a fine paste.

Add this masala, sol and salt to the cooked vegetable and cook for another 2 mts.

Remove from the flame.

Do phannu(season) with mustard seeds, urid dal and curry leaves in oil.

NOTE:

A tbsp of the coconut scrapings fried in oil and mixed with this curry gives it an additional flavour and taste.

CHINNIKANGA DHAAT BALUK(SWEET POTATO THICK CHIPS)

Chips made out of the sweet potato are very tasty. It is very easy to prepare.

Ingredients:

Chinni kanang(sweet potato)-250gms,

salt-1tsp and

oil for frying.

Method:

De-skin the sweet potatoes.

Wash and cut into flat, thick(1/8″) chips.

Make salt solution adding 2 tsps of water in the given salt.

Heat oil in a pan and deep fry half quantity of  the chips till light brown.

Sprinkle 1tsp of salt solution on the top and continue frying till the chips become crispy.

Repeat the process with the remaining chips. These chips will be crispy out side and soft inside.

NOTE:

These chips are by itself tasty. If required, corriander chutney or tomato sauce can be a side dish for this.

LANDHE GUDHGYA BHAJJIA(BREADFRUIT BHAJJIA)

This is an evening snack, goes well with tea/coffee, especially during monsoon season.

Ingredients:

Breadfruit-250 gms,

besan(chana dal flour)-150gms,

chilli powder-2tsps,

turmeric powder-1/4tsp,

hing powder-1/8tsp,

oil for frying and

salt to taste.

Method:

Des-kin the breadfruit and remove the central hard stem.

Cut it into 1/4″ thick flat pieces.

Apply a bit of  salt and roll the pieces well. Keep aside for 15 mts.

Mix besan, chilli powder, turmeric powder, hing and salt and make a reasonably thick batter using water.

Squeeze the water from the chips.

Dip the chips in the batter and deep fry them till they get crispy outside, but remain soft inside.

Fry the chips in small batches.

Remove them with the help of a perforated laddle and place them on a paper napkin to remove excess oil.

NOTE:

These type of bhajjias can be made with other vegetables also, viz. raw banana, brinjal, potato, bell pepper(simla mirch) etc.

LANDHE  GUDHGYA UPKARI(BREADFRUIT  CURRY-DRY)

An easy preparation made from the breadfruit. It is delicious in taste and a bit yummy.

Ingredients:

breadfruit-250gms,

red chillies-3,

mustard seeds-1tsp,

salt to taste and

coconut oil-2tsps.

Method:

De-skin,wash and cut the breadfruit into small pieces.

Heat oil in a pan, crackle mustard seeds, add red chilli pieces, fry a little.

Add the breadfruit pieces and salt .

Stir well and cook on a low flame without adding water.

Cook till the curry is becomes soft.
