KUWLYA HALVO(WHITE PUMPKIN/ASH GOURD HALWA) INGREDIENTS: 

white pumpkin/ash gourd-500gms,    

sugar-350gms,    

ghee-3/4cup,    

KUVLYA HALVO

    

cashew nuts/almonds-10(chopped)  and    

cardamom powder-1tsp.    

Method:    

De-skin and grate the pumpkin with the help of a grater.    

Cook the gratings in a pan on a low fire, keeping the lid on(without adding any additional water).    

After it gets cooked, add the sugar, mix the contents and continue cooking till all the water is evaporated and it becomes dry and start sticking to the pan.     

Add ghee and the cashewnuts/almonds pieces and roast the contents, stirring continuously, till the ghee is fully absorbed and the contents take a golden brown shade . It may take approximately 20 minutes to have it properly done.     

Add cardamom powder and mix well.    

Halwa is ready.    

Note 1: If the Halwa is to be prepared in square pieces, the contents has to be roasted for more time on a low fire(approx. 40mts). After roasting, spread it on a shallow plate and cut it into pieces after it gets completely cooled.    

Note 2: This Halwa can be prepared with bottle gourd also in a similar way.    

VALUE ADDITION: Approx. 100gms of Khova can be added to the cooked pumpkin along with the sugar to enhace the Halwa’s flavour and taste.
